Roasted beets with olives & lemon

Ingredients
2 small beets, tails & tops removed4 kalamata olives, slicedparsley, chopped1 tsp olive oil1/2 small lemon, juicedsalt & pepper to taste
Directions
Wrap beets in aluminum foil, roast at 400 until cooked (~1 hr).
Rub skins off, slice into 1/4" rounds. Plate & sprinkle with olives, parsley, salt & pepper + lemon-olive oil dressing.
