1 cup all purpose flour1/2 cup Whole Wheat flour 1/4 tsp Baking Soda1/4tsp salt1/2 cup (stick) margarine1/2 cup powdered sugar1/4 cup light brown sugar1 egg1/4 cup unsweetened applesauce2 Tbsp almond milk ( or low-fat milk)2 tsp vanilla extract1/2 cup chocolate chips (prefer mini)
Preheat ovento350 degrees. Cover baking sheets with parchment paper.
In a small bowl, whisk together the flour, baking soda and salt.
In a large bowl, with an electric mixer at medium speed, beat the margarine until fluffy. Add the sugars, egg, applesauce, milk, and vanilla and beat 1 minute. Slowly add the flour mixture and beat until combined, about 1 minute. Stir in the chocolate chips.
Drop the dough by the teaspoonfuls onto baking sheets. Bake until lightly browned, about 14 - 16 minutes. Remove and cool on a baking rack.
Serving Size: Make 36 cookies
