15 oz. Whole Black Beans1 Medium Zuchinni1 tsp. minced garlic (clove)2-3 drops of hot sauce2 tsp. hot taco seasoningI chopped Jalepeno Pepper1 tbs. chopped White Onionjuice from 1 lime1 tbs. light sour creamBrown ricea pinch of Cayenne Peppercarb balance flour tortillaschunky salsa
Make brown rice according to instructions.
Black Bean Mixture:
Heat on low the can of black beans, rinsed. Add sliced zucchini cut into 8 pie cut pieces, garlic, hot sauce, taco seasoning, lime juice, jalepeno pepper, onion and cayenne pepper.
Heat tortillas in pan.
Make taco adding black beans, rice, sour cream, and chunky salsa.
Makes approx. 6 servings (tacos) and is good for lunch or dinner. It's spicy and tasty. I'm proud of my creation.
