Mrs. Cater's Potato Leak soup with a twist

Ingredients
8 Potatoes3 Celery stalks, large3 Carrots, medium1 parsnip3 Leaks1 Onion, large 1 Garlic clove (my addition)1 Campbell's vegetable broth box.5 tsp salt and pepper each1 Tbsp olive oil
Directions
Either throw it all in pot and blend after cooked or fry everything except the potatoes before hand in a bit of olive oil, then add potatoes and stock. Cook and blend with hand blender. Add salt and pepper and cheeses opt (cheddar/cheesewiz/parmesan).
Serving Size: Makes 9 one cup servings, very filling, but in my house everyone had about 1.5 cup serving.
