Quinoa, Zucchini & Cheese Casserole

Ingredients
Quinoa, 1.5 cup Chicken Broth, 3 cup (8 fl oz) Olive Oil, 2 tsp Onions, raw, 0.5 cup, choppedZucchini, 2 cup, sliced *Kraft Free Shredded Cheddar Cheese, 1 cup Garlic, 1 clove Paprika, 0.5 tbsp
Directions
Cook quinoa in chicken broth until liquid is absorbed. While quinoa is cooking, heat olive oil in a large skillet. Add garlic, onion and zucchini and cook. In a large bowl, mix 3/4 cup of cheese and spices. Add quinoa and vegetables and mix well. Press into a 9X13 casserole dish sprayed with cooking spray. Sprinkle with remaining cheese. Bake at 350 degrees for 20 minutes.
