Crustless spinach, sausage, and mushroom quiche

6 eggsfrozen spinach (1 10 oz package)half cup cheddar cheese3 sugar-free Sheila Sweetballs (sausage and beef)2 TBSP heavy cream1 cup sliced mushrooms
Spray pie dish with non-stick spray. Beat eggs with the cream. Defrost spinach and chop. Layer spinach, then chopped up meatballs (I used a food processor for this), then mushroom slices. Sprinkle shredded cheese on top. Then pour the egg/cream mixture over all and bake at 350 for 35 minutes.
Serving Size: Makes 6 pie-slice servings.
