4 T Butter Melted1/4 - 1/3 cup honey2 tsp lemon zest1/8 tsp baking soda2 1/4 cups almond flour
- Preheat Oven to 350 degrees. Grease Cookie Sheet
- Mix all ingredients together in a bowl. The batter should be moist. Start with 1/4 cup honey - if you want it sweeter add more in. Roll the batter into small 1/2 inch balls. Place balls on cookie sheet evenly spread apart. Press down and flatten.
- Bake until golden brown - about 12 minutes. Allow to cool.
