Zucchini boats au gratin

4 small zucchinis (about 6 inches long)1 onion, diced very small1 small carrolt, diced very small4 mushrooms, diced very small2 tsp olive oil60g mozarella cheese
Put the onions, carrots and mushrooms in a pan with the oil. Cook for about 10 minutes, until the onions are transparent and soft. Add pepper to taste.
Meanwhile, cut the zucchinis in two on the long side. Spoon the middle off until you still have about 1/4 inch with the skin
Put what you took off in the pan with the vegetables, and cook for 2-3 minutes.
Spoon the vegetable mixture in the 8 boats.
Top with a slice of cheese on top
Cook in the oven for about 10 minutes. If you like, you can broil the cheese after that.
