Healthy Quinoa Banana Bread

1 cup cooked Quinoa (follow package directions)3 medium-size ripe bananas1 tsp cinnamon1 tsp vanilla extract1/4 cup plain non-fat yogurt1/4 cup vegetable oil1/2 cup Splenda1 large egg1 tsp baking soda1 tsp baking powder1 cup whole wheat flour1 cup white flourdash salt (optional)
Preheat oven to 350 degrees Fahrenheit.
Place the cooled cooked Quinoa in a mixing bowl and stir together with the bananas. Add the cinnamon, vanilla, salt, yogurt, oil, sugar and egg and continue mixing.
In a separate bowl mix together the baking soda, baking powder and flour. Add to the wet ingredients 1/2 cup at a time until all the dry ingredients are incorporated.
Use Pam (or similar) spray to grease a loaf pan and pour in the batter. Bake in oven for 1 hour.
Remove the bread when done and let cool for as long as you can wait! Enjoy!!
