KM-Red lentil soup

Ingredients
1 large onion, chopped1.75 cups red lentils7.5 cups vegetable broth (I used chicken broth)1 tsp cumin1 small lemon for its juiceolive oilpepperchopped parsley (for garnish)
Directions
In a saucepan, simmer onions, lentils, stock, and pepper for 45 minutes or until the lentils have disintegrated. Add water to thin the soup if necessary. Stir in cumin and add lemon juice to adjust seasoning to taste. Add a sprinkle of olive oil and parsley.

Serving Size: makes 8 to 9 1-cup servings
