Creamy Light Coleslaw

Ingredients
1 small head of cabbage, shredded1/2 small head of purple cabbage, shredded1 cup shredded carrots1/2 cup fat free mayo2 Tbs red wine vinegarwater, as needed to thin consistency1 Tbs poppy seedssalt & pepper to taste
Directions
I find it tastes best to shred my own cabbage and carrots in the food processor right before making it. Put into a large bowl or conatiner with lid for traveling.

In a small bowl combine dressing ingredients except for water. Whisk together and add water 1 Tbs at a time until it's the desired consistency, you may not use it all. Taste and season with salt & pepper if desired.

Pour dressing over cabbage blend and toss well. You should taste very fresh and crunchy cabbage with a light creaminess from the dressing. It will not be a "wet" coleslaw.

Serving Size: Makes 8 to 12 side dish servings.

    This was wonderful. I made it the night before a big cookout and stuck it in the fridge. It was still crispy and creamy the next afternoon. The only change I made was I used the bag of already shredded cabbage, added a touch more red wine vinegar, and celery seed with the poppy seed. Awesome!! - 7/18/11
