Shrimp & Cauliflower in Coconut Sauce

Ingredients
2 tbsp coconut oil1/2 onion, diced1/2 tsp dried coriander1 tsp pureed ginger1 tsp curry powder1/4-1/2 tsp sea salt2 cloves of garlic, crushed1-2 hot chili peppers (optional)2 cups cauliflower, cut into small florets1/4 cup chopped red pepper300 grams shrimp2/3 cup full fat coconut milk1/2 tbsp dried cilantro or 1 tbsp fresh (extra for garnish
Directions
Heat coconut oil in a large skillet and saute onion until tender. Add spices. Stir in garlic, chili pepper, cauliflower and red peppers. Cover and simmer until veggies are tender. Add shrimp & coconut milk.
Heat through
