Faux Cauliflower Mashed Potatoes

Ingredients
1 large cauliflower (20 oz. florets)3 TBS butter, divided2 TBS whipping cream (may substitute sour cream)2 TBS mayonnaise (I used vegenaise)1/2 tsp salt1/4 tsp white pepper (or to taste)1/4 cup grated parmesan cheese
Directions
Preheat oven to 400. Microwave cauliflower in covered dish with 2 TBS water for 5 minutes, then 1 min. at a time till cauliflower is very soft. Add to blender or food processor with other ingredients (except for 1 TBS butter and the Parmesan). Pour into oven-safe dish, dot with butter and sprinkle with Parmesan. Bake 20 minutes or until Parmesan is browned.
