Whole wheat pumpkin muffins with applesauce and flaxseed

Ingredients
1 cup pumpkin (puree) 1/2 cup brown sugar 1/4 cup unsweetened applesauce 1/4 cup water 2 eggs 1 cup wheat flour 1/2 cup whole oats 2 tsp baking powder 1 tsp nutmeg 1 tsp cinnamon 1 tsp vanilla extract 2 tbsp flax seeds (ground) 1 cup apple (chopped and peeled)
Directions
Preheat oven to 375.

Mix wet ingredients.

Mix dry ingredients separately.

Combine, mixing as little as possible (the more you mix, the tougher it gets).

Add chopped apples.

Put into greased muffin tins (about 1/4 c per tin).

Bake at 375 for 15-20 minutes or until a knife inserted into the center of a muffin comes out 'clean.'

Serving Size: Makes 12 muffins. 1 serving = 1 muffin

    I left the apple chunks out since I don't care for the texture and I topped the muffins with whole flax seeds. These were delicious! I think I may adapt this recipe into my pumpkin bread, so yummy. - 10/28/12
