Apple Cinnamon Coffee Cake

CAKE:1 cup whole wheat pastry flour1/2 cup all purpose flour1/2 cup splenda for baking1+1/2 tsp baking powder1+1/2 tsp ground cinnamon1/2 tsp salt3/4 cup 1% milk2 tbs butter, melted1 tsp vanilla extract1 large egg, lightly beaten1 cup diced & peeled granny smith apples (one apple)cooking sprayTOPPING:1/8 cup splenda brown sugar blend1 tbs all-purpose flour1 tbs whole wheat pastry flour1/2 tsp ground cinnamon2 tbs chilled butter, cut into pieces
Preheat oven to 350.
To prepare CAKE:
Put flours, sugar, baking powder, cinnamon, and salt into a bowl. Mix. Make a well in middle of mixture. Add milk, melted butter, vanilla, and egg. Stir until just moistened. Fold in apples. Pour batter into an 8 inch square baking pan that has been greased with cooking spray.
TOPPING:
Combine brown sugar, flours, cinnamon, and butter with a pastry cutter or with a fork until crumbly. Sprinkle over top of cake.
Bake 45 minutes, or until toothpick inserted into center comes out clean.
Cool 10 minutes before serving.
Makes 9 3" pieces.

Very tasty. Didn't changing anything and it turned out pretty good. Boyfriend is inhaling it! I think it could be a little more moist, so next time I think I will add 1/2 cup of applesauce to see if that makes a difference. He also suggested adding oats to it, which I may try next time. - 9/7/08
