Fresh Pumpkin and Bacon Soup

4 cups cooked mashed pumpkin500 ml water ( or water that the pumpkin was boiled in )1 onion diced30 g bacon - fat removed1 bacon stock cubes4 tbsp light sour cream
Chop bacon into small pieces. Put into a frying pan with a tablespoon of water. Broil gently. Add onion and broil for approx 3 mins until onion is soft.
Put mashed pumpkin into large saucepan. Heat on low heat.
Add onions and bacon. Add stock cube and water.
Simmer for 10 minutes.
Serve with low fat sour cream and chives.
