Banana Muffins

Ingredients
Muffins:1 1/2 C. Whole wheat flour1 tsp. Baking Soda1 tsp. Baking powder1/2 tsp. Salt3 Bananas, well-ripened3/4 C sugar1 large Egg, beaten3 tbsp. Appleasauce2 tbsp. Butter, meltedCrumb Topping:1/3 C. Brown sugar, packed2 Tbsp. Whole wheat flour1/8 tsp. Cinnamon1Tbsp. Butter, softened
Directions
Preheat oven to 375 degrees. Lightly grease 16 muffin cups. In a large bowl. mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg, applesauce and butter. Stir in flour mixture just until smooth. Spoon batter into prepared muffin cups.
In a small bowl, mix together crumb topping ingrediants, cutting in butter until the mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes.
Makes 16 muffins.
