Basic Grilled Chicken Quesadilla

2 Flour Tortillas1/2 Chicken breast (grilled)1/4 cup cheese (I prefer a mexi-blend)
1. Spray a skillet with a calorie-free cooking spray, and grill the chicken (I like to use already cooked chicken leftovers too, and I will toss in a pan to warm).
2. When cooked through, pull out of pan and set aside.
3. Begin layering the quesadillas: Bottom tortilla, 1/2 of the cheese, chicken (cut/shredded to your liking), rest of the cheese, and the second tortilla to top.
4. Brown each side for a few minutes to melt cheese and crisp up the tortillas.
5. Cut and serve.
Note: Sometimes, if I need a lower calorie meal, I take half of the quesadilla, chop it up, and place on a salad with salsa for a dressing (not included in nutrition facts).
Serving Size: Makes 1 full Quesadilla
