2.5 cups herb seasoned dry stuffing cubes (Pepperidge Farm)1 lb lean bulk sausage (browned and drained)8 oz Egg Beaters2.25 cups non-fat milk1 can 98% fat free cream of mushroom soup (condensed).25 tsp dried mustard1- 4 oz can mushrooms, drained1- 10 oz package frozen chopped spinach, (thawed and squeezed dry)2 cups shredded lowfat cheddar jack cheese
Spread dry stuffing cubes on bottom of 9x13 pan that has been misted with non stick spray. Crumble sausage on top of stuffing. In a large bowl whisk eggs and milk together and then whisk in rest of ingredients. Pour over sausage and stuffing. Sprinkle a bit of saved cheese on top. Refrigerate overnight. Bake at 325 for about 60 minutes. Can be garnished with herbs, carrots, and salsa.
