Healthy Pumpkin Muffins

Ingredients
2-3/8 cups whole grain flour1/2 cup sugar3/4 tsp baking powder3/4 tsp baking soda1/2 tsp salt3/4 tsp nutmeg3/4 tsp cinnamon3/4 tsp cloves6 egg whites (equivalent to 3 whole eggs)1 14 oz can pure pumpkin 1/2 cup unsweetened apple sauce1 cup chopped walnuts (or pecans)
Directions
Preheat oven to 350. Grease 12 cup muffin tin.
Combine flour, sugar, baking powder, soda, salt, nutmeg, cinnamon and cloves.
In a separate bowl, mix eggs, pumpkin and applesauce until smooth.
Add to dry ingredients and stir thoroughly to make a smooth batter.
Stir in walnuts.
Spray muffin tins with no stick spray. Do not use paper muffin cups as this recipe is too sticky. Unsprayed silicone muffin pan works best.
Spoon into muffin tins 2/3 full and bake 30-35 minutes.
