Beef & Zucchini Chili

Ingredients
12 oz extra-lean ground beef1 tbsp canola oil1.5 cup onions, chopped4 cloves minced garlic2 tbsp chili powder1 tbsp oregano1 tsp ground cumin2 green bell peppers, chopped2 cups zucchini, diced1 can (796ml) diced tomato1/2 cup tomato paste1 can (540ml) red kidney beans, drained and rinsed
Directions
In a large saucepan over medium-high heat, brown ground beef and remove to plate. In same saucepan, heat oil over medium heat and add onions, garlic, chili powder, oregano and cumin, stirring for about 5 minutes or until softened. Add peppers and zucchini, cook for about 10 minutes or until lightly golden. Add tomatoes, tomato paste and browned beef, bring to a boil. Reduce heat and add beans. Simmer for about an hour.
