Mini Chocolate Pavlovas

4 Egg whites1 cup Granulated Sugar1/4 tsp. Salt1 tsp. Lemon juice1 Tbsp. Cocoa powder
Preheat oven to 300 degrees
Prepare a baking sheet with parchement paper
Whisk/whip egg whites with salt until frothy
Add sugar and beat until stiff peaks form
Add lemon juice and beat until combined
Add cocoa powder to the side of the bowl and gently fold in with spatula.
Drop 1/2 cup blobs of meringue mixture onto parchament and flatten with spatula (making a nest)
Bake for one hour in preheated oven. Turn off the heat of the oven and leave in for one hour.
Serving Size: Makes 10 mini pavlovas
