Yummiest Energy Bars EVER

1/2 cup sunflower seeds1/2 cup cashews1/2 cup pumpkin seeds1/2 cup almonds1/2 cup unsweetened coconut6 pitted dates6 dried apricots1 fresh apricot4 dried figs1 tsp cinnamon1 tsp cardamom1/2 tsp salt2 tbsp honey1/4 cup almond butter
Chop first four ingredients in a food processor, separately, until of desired consistency. I like to have a few larger pieces left. I process them separately because some take longer to chop up than others. Put in a bowl and set aside.
In the food processor, add the dried and fresh fruit and process. You can have the fruit as a smooth puree, or leave some of it chunky. Experiment. Scoop all out into bowl with dried ingredients. Add spices, agave and almond butter. Mix well to thoroughly combine all ingredients. Press into a 9 X 9 pan, cover and chill for 30 minutes. Cut into bars and keep in fridge or freeze. These make a great addition to kids' lunchboxes or provide a quick meal on the go. Delicious and beautiful!
