Ingredients
*Ancent Harvest's Quinoa, Traditional, Organic (1/4 cup dry / 46 grams), 1 cup *Wegman's Extra Virgin Olive Oil, 2 Teaspoons *Swanson Vegetable Broth, 14.5 oz *onion - cooking, small*Aldi Minced Garlic, 3 tsp *BelGioioso Parmesan Cheese, Freshly Shredded, 1/4 cup
Directions
Sauteed chopped onion and garlic in 2 teaspoons olive oil in medium pan. Add 14.5 oz vegetable broth (1 small can) 1.5 oz water, 1 cup quinoa. Stir and simmer for 15 minutes or till all water is absorbed. Mix in 1/4 cup shredded parmesan and stir till melted.
