Secret Recipe Chocolate Chip Cookies

Ingredients
.5 cup rolled oats, regular or quick2.25 cup flour1.5 tsp baking soda.5 tsp salt.25 tsp cinnamon1 cup (2 sticks) butter, softened.75 cup firmly packed brown sugar.75 cup granulated sugar2 tsp vanilla extract1 tsp lemon juice2 eggs3 cups semisweet chocolate chips1.5 cups chopped walnuts (optional)
Directions
Preheat oven to 350. Cover 2 baking sheets with parchment paper. Place rolled oats in blender or food processor and process until finely ground. Combine oats, flour, baking soda, salt and cinnamon in a mixing bowl.


In another bowl, cream butter, sugars, vanilla and lemon juice together using an electronic mixer. Add eggs and beat until fluffy.

Stir the flour mixture into the egg mixture, blending well. Add the chocolate chips and nuts to the dough and mix well. Using 1/4 cup of dough for each cookie, scoop round balls with an ice cream scoop and place 2 1/2 inches apart on prepared baking sheets. (personal note: I like to use smaller amounts. This will make 2 dozen; I usually get about 3 doz from this recipe).

Bake until cookies are lightly browned, 16-18 minutes. Transfer to a wire rack to cool completely. Store in a sealed container to keep them soft and chewy.

    I actually have had this recipe sitting around for awhile and just tried it out today. OMG! To die for cookies. If you're going to splurge and eat a cookie, these are the ones to eat. - 2/14/09
