Ingredients
2.85 lb John Morrell Corned Beef Brisket (ends up cooking down to 14 oz meat minus the fat)1 T extra light virgin olive oil2-1/2 c turnips, peeled and cubed2 c parsnips, peeled and cubed2 c white onion, chopped16 oz baby carrots6 c (1/2 LARGE head) cabbage, cubed
Directions
Heat olive oil in pan. Braise corned beef on all sides, about 5 minutes each side (keeps juices in).
Spray crockpot with non-stick spray.
Put corned beef in crockpot. Add veggies. Cover and cook on low 6 - 8 hours.
