Karen's brown rice with veggies and beans

Ingredients
Diced butternut squashDiced zucchiniDiced onionBrown RicePinto BeansLow fat CheddarAlmond SliversFresh ThymeSaltPepperGarlic Powder
Directions
Dice fresh zucchini, onions and butternut squash in very small pieces. Spray a 9 x 13 baking dish with butter flavored cooking spray,add diced veggies and bake on 350 degrees for 10 minutes stirring once. While waiting,
cook the brown rice (I used Bird's Eye Steam Fresh, cook in bag brown rice in the microwave for 4 min and 30 seconds.)Rinse and heat the pinto beans in a covered microwave dish for 1 min 30 seconds..
Toss veggies, rice and beans together.
Top with shredded low fat cheddar, the leaves of one small sprig of fresh thyme and a sprinkle of slivered almonds.
Add a sprig of fresh thyme on top for decoration.
