Chicken Breast Omelet

Ingredients
2 egg whites1 egg yolk3 slices roasted chicken breast (thin)14 g finely shredded sharp cheddar cheese2 tbsp chopped green onion2 slices tomato (thin)1 tbsp extra virgin olive oilSea Salt to taste
Directions
Heat olive oil in skillet on med heat. slightly beat egg whites and yolk and pour into skillet (tilt skillet so that egg spreads evenly). Let simmer until firm. Turn egg as a whole (as if turning a pancake). Place chicken slices on half of egg followed by tomato slices. Sprinkle green onion on tomato then cheddar cheese. Fold uncover egg over cheese. Allow cheese to melt and remove.
