Calabacitas (New Mexican Style)

Ingredients
Olive Oil, 1 1/2 tbsp White onion, 1/2, choppedGarlic, 2 cloves Mexican Grey Squash, 3 cups, choppedMushrooms, 1 1/2 cup, slicedChopped, Roasted, Green Chile, 3/4 cupSweet Corn, Fresh, 1 earLime Juice, from 1Fresh cilantro, 2 tbsp
Directions
To a large saute pan, add oil and garlic. Cook for about a minute, add onion. Cook for about another minute, add squash, green chile, and corn (removed from ear). Saute for about 5 minutes until squash is getting tender. Add mushrooms, lime juice, cilantro, and salt and pepper to taste.
