Focaccia Pizza

Ingredients
1 cup white flour1.5 cups whole wheat flour1 pkg instant yeast1 tsp salt2 tbsp rosemary3 tablespoons extra virgin olive oil1 pkg frozen spinach2 large tomatoes2 large mushrooms4 cloves garlic1/2 cup shredded mozzarella cheese2 tbsp parmesan cheese
Directions
mix one cup white flour, 1 cup hot water, 1 pkg yeast, 2 tbsp rosemary, 1 tsp salt, 2 tbsp olive oil.

Add 1/2 cup whole wheat flour at a time to make a elastic dough.

Knead dough for 10 minutes

(you can do all the above in a standing mixer)

Put dough in a bowl, cover and let rise for about 30 minutes

Drain frozen spinach, slice tomatoes, mushrooms, garlic cloves.

In a large sauce pan with the rest of the olive oil, saute tomatoes, mushrooms, garlic and frozen spinach. Drain on paper towels

Roll our dough in either a circle or rectangle (what ever kind of pan that you have) - about 1/8 inch thick. Lay onto cookie sheet or other pan that has been sprayed with cooking spray.

Press dough so that the edge forms a lip.

Spread spinach over dough. Distribute tomatoes, mushrooms. garlic.

Sprinkle mozzarella cheese and parmesan cheese.

Let rise for 20 minutes. Pre heat oven to 400 degrees.

Bake for 20-25 minutes.
