Remove chicken thighs from skillet and add the remaining two tablespoons of olive oil to skillet along with sausage, fresh cut creole seasoning and okra. Cooked the mixture on low for 30 minutes or until the slime is no longer on the okra. Return the chicken thighs to the skillet along with the tomato sauce, tomatoes, and water. Season to taste with salt and black pepper or Cajun seasoning. Cook the mixture for 20 minutes and than add the shrimp. Cook the mixture for 10 minutes or until the shrimp are pink or cooked. This stew can be served over cooked rice. Do not cook this stew in a black cast iron skillet because it will cause the okra to turn a dark color. You may substitue the fresh cut creole seasoning with chopped onion, bell pepper, celery, and garlic.
