Turkey Bacon and Hash Brown Bake

Ingredients
1/2 package of low sodium turkey bacon1/4 cup vegetable oil4 cups frozen hashbrowns10oz of Frozen chopped broccoli1 bell pepper(any color)8 large eggs1cup fat free evaporated milk1/2 tsp salt1 cup shredded cheddar cheese
Directions
cook bacon in skillet 4 to 6 min. cook hashbrowns for 3 to 4 min turn and add vegetables and oil cook 3 to 4 minutes more.
whisk eggs together with milk and salt. Stir in cheese and cooked bacon. pour over potato mixture spread in pan.
bake uncovered for 40 to 45 minutes at 350

    My family and I enjoyed this recipe. I think next time I won't fry the broccoli and just mix it in with the other ingredients. It's a little plain, could do with some zip. Just not sure what should be added. - 3/18/15
