Black Bean Soup with Fresh Salsa

Ingredients
1 tbsp olive oil1 small onion chopped (reserve 1 tbsp for salsa)1 stalk celery chopped2 cloves garlic choppedcarrot chopped2 cups vegetable stock2 cups cooked brown rice1 can black beansFor Salsa1 tbsp of reserved onion1 tomato chopped1 avocado chopped2 tsp lime juice1/4 cup cilantro minced1 tbsp olive oil
Directions
Saute onion, celery, carrot and garlic in olive oil. Add all toher soup ingredients and simmer 15 minutes.
Meanwhile, mix salsa ingredients. Serve soup with the salsa on top...this is also good with tortilla chips.
