Fermentee - 8-16 hours before breadwater 175gfresh yeast 4gbread flour 225 grams Focacciabread flour 575gwater 400 gyeast 4gsalt 15golive oil 30golives 4ozparmesan cheese 3 oz
prepare the starter - fermetta 8-16 hours before bread
mix all bread ingredients until while hydrated, then rest 20 min, stretch 3 times, rest 20 min, stretch 3 times, rest 20 min, stretch 3 times, rest 20 min.
after final rest stretch dough into well oiled pan, use olive oil. once stretched allow to rise until double in size. then create moisture wells and pour heated oil 3 oz, garlic and rosemary to taste, bake until golden brown.
