Black-eyed Pea and Tuna Salad

Ingredients
1 c. dried black-eyed peas1/2 c. minced red onion1 can tuna, packed in water3 TB red wine vinegar1/4 c. olive oil1/4 c. parsley, mincedsalt and pepper to taste
Directions
Place peas in a saucepan, cover with water and soak for 4 hours. Drain, re-cover with water and boil 1/2-1 hr. until soft. Drain and cool. Mix in onions and tuna. Mix vinegar, salt, pepper, and parsley; add oil. Pour dressing over salad.
