Curried Lentil Soup

1 1/2 tbsp olive oil2 medium onions, chopped2 large carrots, chopped3 large stalks celery, chopped3 cloves garlic, minced4 tsp curry powder1 16-oz package dried lentils9 cups (or more) low-salt chicken or vegetable broth
This is a very easy recipe to make, if you can chop the vegetables with a food processor (or buy them already chopped.)
Heat oil in heavy large pot over medium heat. Add onions, carrots, and garlic; saute until vegetables begin to soften, about 10 minutes. Add curry, then lentils, and stir 2 minutes. Add 9 cups broth and bring to boil. Reduce heat, cover, and simmer until lentils are tender, adding more broth if soup is too thick and stirring occasionally, about 1 hour 15 minutes. Season soup to taste with salt and pepper.
I like this recipe served over white or brown rice.
