Black Beans (to serve over rice) with Ham

Ingredients
2 # black beans, cooked (~12 cups)2 onions, dicedseveral ribs celery, chopped2 bell peppers, chopped6-8 garlic cloves, minced1# ham, diced smallsaltpepper1 -2 t thyme4 bay leaveschopped green chilies, to tastehot sauce, to taste
Directions
Saute onion, celery, bell pepper for several minutes
Add garlic and saute a bit longer
Add sauteed veggies to the beans, along with ham and seasonings
Simmer for a couple of hours
