Ingredients
2.5 lb. Chuck Roast4 teaspoons minced garlic1 lb. baby red potatoes8 oz. Baby carrots2 tablespoons olive oil
Directions
Preheat oven to 350 degrees. Season meat with salt, pepper, and garlic. Add oil to pan, brown meat on both sides. Place meat in a deep pan and add water so it covers bottom of pan. Cover with foil. Bake for 2 hours. Remove from oven, add potatoes and carrots. Cover. Cook an additional 30 minutes or until carrots and potatoes are tender.
