1 stick light string cheese1/4 cup canned crushed tomatoes, plus more for optional dip1/2 teaspoon Italian seasoning , plus more for optional dip1/4 cup sliced mushrooms1/4 cup chopped green bell pepper1 medium-large high-fiber flour tortilla with about 110 calories1 wedge The Laughing Cow Light Creamy Swiss cheese4 slices turkey pepperoni, chopped
Break string cheese into thirds and place in a blender or food processor--blend at high speed until cheese takes on a shredded or grated consistency. (Or just tear string cheese into pieces and roughly chop.) Set aside.
In a small bowl, combine tomatoes with Italian seasoning. Mix well and set aside.
Bring a medium-large skillet (at least the size of the tortilla) sprayed with nonstick spray to medium-high heat on the stove. Add mushrooms and bell pepper. Stirring occasionally, cook until softened, about 4 minutes. Remove veggies and set aside.
Remove skillet from heat, re-spray, and bring it to medium heat on a stove. Spread one side of the tortilla evenly with cheese wedge. Lay tortilla flat in the skillet. Evenly spread seasoned tomatoes over one half of the upward-facing side of the tortilla.
Evenly top tomatoes with half of the shredded/grated cheese, followed by veggies and turkey pepperoni. Top with remaining half of shredded/grated cheese. Cook for 3 minutes.
Using a spatula, carefully fold the plain half of the tortilla over the filling and press down lightly to seal. Carefully flip and cook until both sides are crispy, about 3 minutes.
Once cool enough to handle, slice into wedges. If you like, mix up some extra seasoned crushed tomatoes for your dipping pleasure and enjoy!
