Cabbage & Carrot Fried Rice

Ingredients
2 cups brown rice, cooked2 eggs, scrambled1/2 onion, chopped2 cloves garlic1 carrot, diced1 cup cabbage, chopped1 tbsp. Olive oil 1 tbsp. soy sauce
Directions
Saute onion, garlic and carrots in olive oil until transparent. Add cabbage and continue to saute until soft, yet crisp. Add rice and blend well. Add soy sauce and continue stirring. Fold in the scrambled egg.
