Big banana chocolate chip spelt muffins

2 cups spelt flour1 1/2 tsp baking soda1/2 tsp salt1/2 cup cane sugar1/3 cup coconut oil or canola oil5 ripe bananas, 4 mashed, 1 diced1/4 cup filtered water1 tsp vanilla extract1/2 cup semi sweet (dairy free) chocolate chips1/2 cup chopped walnuts
Preheat oven to 350F. Put paper liners in muffin cups.
In a medium side bowl, mix flour, baking soda and salt together.
In a large bowl, beat the sugar, oil and mashed bananas together. Stir in water and vanilla and mix thoroughly. Add the flour mixture, along with the chocolate chips and diced banana, stir to mix.
Fill each muffin cup with batter. Bake for 20 - 30 minutes, until they are golden brown and a toothpick inserted into the center comes out clean.
