Hot Potato Soup

Ingredients
4 red potatoes, skin on, sliced3 leeks (including some greens) chopped3 cloves garlic, minced1 tbsp ground black pepperRed pepper flakes, to taste4 cups organic vegetable broth
Directions
Saute leeks and garlic in large soup pan until golden. Add remaining ingredients, and bring to low boil, cooking for 40 minutes, or until potatoes are soft.

Puree approximately half of the soup (or all of it, if you prefer the non-chunky version) in blender, and return to pot.

Makes about 8 1 cup servings.

I usually make a double recipe, and use the extra as a base for various other soups, adding additional veggies such as carrots, bell peppers, spinach, corn, and/or mushrooms. You can also add sausage, ham, or ham hocks if you want a non-vegetarian version.
