Sweet & Sour Chicken Stir Fry

Ingredients
2 Chicken Breasts cut into strips1 Yellow Pepper chopped1 Red Pepper chopped1 Green Pepper chopped2 cups broccoli chopped or two crowns2 cups sliced fresh mushrooms1 cup sliced Onions3/4 cups (3-4 servings) Uncle Ben's Instant Whole Grain RiceSweet and Sour Sauce1/3 cup rice vinegar1/3 cup packed light brown sugar or Splenda brown sugar blend3 tbsp's Ketchup2 tbsp's light soy sauce1 tsp Asian (dark) seasme oil1 tsp minced fresh ginger1 clove garlic, minced2 tsp's water
Directions
Spray Pam in a large frying pan or wok, and combine chicken, onions and mushrooms. Fry until chicken is cooked through.

Meanwhile for the sauce:
In a small bowl, combine the vinegar, brown sugar, ketchup and soy sauce
In a small saucepan, heat the oil. Add the ginger and garlic; cook until fragrant, 30 seconds.
Add the vinegar mixture and bring to a boil; boil 1 minute.
Meanwhile, dissolve the cornstarch in the water; stir into saucepan. Return to a boil and cook until mixture is thickened, 1 minute longer.

Add remainder of vegetables to the chicken and cook until heated through.
Add sauce mixture to stir fry and cook for 5 minutes.

Cook rice according to directions.
