Fresh Shrimp and Soy Bean Salad

Ingredients
1 lb cooked salad shrimp-thawed1 bag of shelled edamame/soy beans( 2.5 cups)1 can white beans( rinsed well)1 large tomato diced1/4 cup minced red onion1/2 cup loosely packed fresh cilantro( chopped after you measure) 1/3 cup fresh lime juice5 Tbls fat free mayo1 Tbls Olive oil1/2 teas salt 1/2 teas pepper
Directions
Place edamame in boiling salted water- until tender( 5 min)
Drain and blanche with cold water!

Meanwhile mix shrimp, beans, tomato, onion and cilantro in Large bowl. Add edamame. Mix all remaining ingredients in smaller bowl and whisk until thick and smooth. Adjust salt and pepper if desired. Toss dressing over salad and serve.
