oven fried potatoes and onions

Ingredients
1 lb potatoes with skin1/2 onion1 tbsp evoo
Directions
wash and slice or dice potatoes
slice or dice onion
combine and toss with evoo
salt & pepper or season to taste
spread in single layer on baking sheet

bake in 400* oven 15-20 minutes

toss every 5 minutes and spread back out

remove when desired color is acheived and fork tender
