1 med potato diced with skin2 tbs onion chopped2 tbs green or red pepper choppedSea Salt - to tasteMrs Dash - to tastePam cooking spray1/2 cup water
Spray cast iron skillet with cooking spray, heat empty skillet on med heat add diced potatoes, onion, green peppers, salt and Mrs. Dash.
Cook 2-3 min, stiring often until potato's start to brown and begin lightly sticking to bottom of pan, add water and put on tight fitting lid so that potato will seam cook. Reduce heat and cook 5-8 minuites or until potatos are done. Stir occassionally to prevent sticking. More water may be used if needed.
Serving Size: makes 2 1-cup servings
