Eggplant & Pasta Delight

Ingredients
Whole wheat bow tie pasta, raisins, olive oil, cherry tomatoes, scallions, garlic, 1/2 eggplant, parsley, black pepper.
Directions
Prepare pasta. Mince garlic, dice onion and tomatoes. Peel and chop eggplant into sm. cubes. Heat oil, saute onion and garlic till soft (2 min.). Add eggplant. Cook 8 min till soft. Add raisins, parsley, pepper and cooked pasta, heat through, add cheese, serve.
