Organic Banana Walnut Loaf

3 overripe organic bananas1 large free range organic egg1 cup organic sugar in the raw (unbleached granulated)1.5 cups organic whole grain unbleached, unenriched flour1 tbsp ground cinnamon1 tbsp extra virgin olive oil1/2 cup walnuts, if desired
Mash 3 soft bananas in medium bowl.
In separate small bowl, mix egg and sugar well. Pour over bananas.
Add flour, cinnamon, baking powder, salt and oil (may substitute 1 tbsp soy milk for oil). Add walnuts if desired.
Fold mixture gently until moistened throughout. Do not over-stir, as it will make your bread stiff.
Pour into non-stick 9 x 5 loaf pan. Bake at 325 degrees in pre-heated oven, about 60 minutes.
Remove when loaf has risen and fork inserted into center comes out clean. Cool before removing from pan.
Makes 12 3/4" slices.
