Broccoli Cheese Chowder

2 bunches or 1 pound fresh broccoli, chopped1 medium onion, chopped1/2 cup light margarine1/2 cup white flour1/4 cup non-fat dry milk4 cups waterMix dry milk and water together before using.1 cup fat free chicken broth1 1/2 tsp. salt2 cups shredded or grated mild cheddar cheese
Cook broccoli until tender. Do not overcook. Drain and set aside. Saute chopped onion in margarine in large soup pot and then add flour. Gradually stir in milk, chicken broth, and salt. Stir constantly until mixture reaches a boil.Cook 1 to 2 minutes, until thickened. Add broccoli and cook over medium heat briefly. Stir in cheese. Avoid bringing to a boil. Serve immedicately or keep on warm over low heat.
