vegan mashed potatoes

Ingredients
6 medium russet potatoes, peeled and cut up2 Tbs Earth Balance Whipped Buttery Spread2 cloves garlic, peeled and crushed. 1/2 cup vegetable brothsalt and pepper to taste
Directions
Boil the potatoes with the garlic cloves until potatoes are tender.
Drain and mash
Mash in the Earth Balance and slowly add the hot broth until the desired mashed potato consistance is achieved.
Salt and pepper at will.

    Um, it's not Vegan if it has butter in it. Substitute with 3/4 the amount of Canola Oil - 11/22/07
